Coconut Date Bites

Ingredients

  • 2 cups dried Mejool dates (remove the pitts)
  • 1-2 Tablespoons peanut or almond butter (optional)
  • 1/4 cup raw walnuts
  • 1 teaspoon vanilla extract
  • 1/2 cup unsweetened shredded coconut

Instructions

  • Using a food processor, PULSE the dates to create a thick paste.
  • ADD the peanut butter and PULSE.
  • ADD the walnuts, vanilla and 1/4 cup shredded coconut. MIX until a thick paste forms.
  • TRANSFER mixture to a medium bowl.
  • SCOOP out 2 Tablespoons at a time of the mixture and ROLL each into a round ball.
  • ROLL each in the coconut, gently pressing coconut into each ball.
  • I like to serve in mini cupcake liners.
  • Instead of using coconut, try rolling in 1/4 cup cocoa powder or chopped nuts.
