Watermelon Salad with Cucumber, Feta and Pistachios

  • 4-5 cups watermelon, cut into ¾–inch cubes
  • 1/2 cucumber, seeds removed, cut into ¾-inch cubes (or use 1 English cucumber)
  • 1/4 red onion, thinly sliced (about ¼ cup)
  • 1/4-1/2 cup crumbled feta or goat cheese
  • 1/4 cup roasted pistachios, rough chopped
  • 1/4 cup mint, finely chopped
  • 1/2 cup Italian parsley, finely chopped


  • 1/4 cup olive oil
  • 1/8 cup white balsamic vinegar
  • 1 Tablespoon honey
  • 1/4 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon fresh black pepper
  • 1/8 teaspoon ground cloves


  • In a large bowl, ADD watermelon, cucumber, onion, feta cheese, pistachios, mint and parsley. MIX gently to combine.
  • In a small bowl, WHISK together olive oil, vinegar, honey, mustard, salt, pepper and cloves.
  • ADD dressing to the salad and MIX gently to combine.


The watermelon and cucumber are super watery, so this salad is best put together right before serving.
I usually make the dressing ahead of time and mix it into the salad right before serving.
