In a medium bowl, TOSS the peaches with 1 Tablespoon of lime juice. (This keeps the peaches from turning brown as you prep the other ingredients)
In a separate bowl, MASH the avocados, remaining lime juice with a fork or potato masher until creamy. ADD in the onion, jalapeños, cilantro, cumin and garlic w. STIR to combine.
GENTLY mix in the peach mixture into the mashed avocado. Add salt to taste.
Note: Peel peaches by bringing a medium size pot of water to a boil. Cut an X in the bottom each peach. Place into the boiling water and cook for 30 seconds. REMOVE peaches and place in ice cold water. Skin should peel easy.
