Peachy Guacamole

- Ingredients
- 2 small peaches peeled and diced (see notes for easy peeling)
- 2 Tablespoons freshly squeezed lime juice divided
- 2 avocados peeled and pitted
- 1/4 small red onion finely diced
- 2 small jalapeƱos seeded and diced (or leave them if you like it SPICY)
- 1/8-1/4 cup chopped cilantro
- 1/4-1/2 teaspoon ground cumin
- 1 clove garlic minced (or 1/8 teaspoon garlic powder)
- Salt to taste
In a medium bowl, TOSS the peaches with 1 Tablespoon of lime juice. (This keeps the peaches from turning brown as you prep the other ingredients)
In a separate bowl, MASH the avocados, remaining lime juice with a fork or potato masher until creamy. ADD in the onion, jalapeƱos, cilantro, cumin and garlic w. STIR to combine.
GENTLY mix in the peach mixture into the mashed avocado. Add salt to taste.
Note: Peel peaches by bringing a medium size pot of water to a boil. Cut an X in the bottom each peach. Place into the boiling water and cook for 30 seconds. REMOVE peaches and place in ice cold water. Skin should peel easy.
