Homemade Pancake and Waffle Mix

For the Pancake Mix

  • 4 cups all-purpose flour
  • 3 Tablespoons baking powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 3 Tablespoons superfine sugar or vanilla sugar

For the Batter

  • 1 large egg
  • ½ cup reduced fat milk or full fat
  • ½ cup buttermilk
  • 1 Tablespoon melted butter
  • 1 cup Pancake Mix
  • Additional butter for the griddle

For the Batter - to Each 1 Cup of Pancake Mix



    • MIX all the ingredients together. STORE in a lidded container


    • When ready to make the pancakes, MELT 1 Tablespoon of butter in microwave.
    • COMBINE beaten egg, milk, and melted butter.
    • ADD pancake mix.
    • MIX until well combined.
    • HEAT a flat griddle or pan. ADD about 1 teaspoon butter.
    • SPOON 1/4 cup of batter onto the hot griddle.
    • When bubbles appear top of the pancakes, TURN them over and cook for 1-2 minutes until golden brown on both sides.


    • Double the pancake mix batter to have a supply of the mix for later use.
    • Batter:  Just remember the 1-1-1-1 rule: 1 c pancake mix,1 egg, 1 c milk ( use ½ buttermilk), 1 T butter.
