Easy Like Sunday Morning
A typical Sunday morning when my kids were young always started with pancakes or waffles. Depending on whether I was willing to fire up the waffle maker, it was usually pancakes.
I’d get out the the eggs and whisk them with the milk and melted butter (I never used the recommended oil). But when then one time I went to look for my beloved Aunt Jemima mix in the pantry. She was running on empty and the kids were hungry. It was one of those days that I didn’t practice what I preached. I didn’t get all the ingredients out before starting to prep a recipe.
Homemade Pancake and Waffle Mix
I remember a recipe I saw in Nigella’s Lawson cookbook I had received a few days earlier as a Christmas gift from my mother-in-law, Nigella Express: 130 Recipes for Good Food, Fast. I remember reading her “master” recipe for a Homemade Pancake Mix and thinking how easy it would be to put that together. I even earmarked it for another day. Well, it looked like that day had arrived.
I got the book out and turned to the earmarked page. I got the ingredients out for the mix and started prepping. Within a few short minutes, I was flipping golden brown pancakes on my griddle. The results were so wonderful. When I read the list of not-so-desirable-ingredients in the box Aunt Jemima was offering, mixing a huge batch of Nigella’s Homemade Pancake Mix seemed like a no brainer.
I love this recipe and I love the adaptability of it. On any given day, I add lots of extras–ground flax seeds, hemp seeds (missing the THC in case you were wondering). And since it’s the “in” thing to do in the healthy eating world, I’ve been adding ground chis seeds. Fresh blueberries, especially when they’re in season, are another added treat.
The buttermilk in the Homemade Pancake Mix give the pancakes and waffles a light and delicious texture that I love. If you don’t have buttermilk, feel free to use good old regular milk in its place. They still work.
Homemade Pancake and Waffle Mix
Ingredients
For the Pancake Mix
- 4 cups all-purpose flour
- 3 Tablespoons baking powder
- 2 teaspoons baking soda
- 1 teaspoon salt
- 3 Tablespoons superfine sugar or vanilla sugar
For the Batter
- 1 large egg
- ½ cup reduced fat milk or full fat
- ½ cup buttermilk
- 1 Tablespoon melted butter
- 1 cup Pancake Mix
- Additional butter for the griddle
For the Batter - to Each 1 Cup of Pancake Mix
Instructions
PANCAKE MIX
- MIX all the ingredients together. STORE in a lidded container
PANCAKE BATTER
- When ready to make the pancakes, MELT 1 Tablespoon of butter in microwave.
- COMBINE beaten egg, milk, and melted butter.
- ADD pancake mix.
- MIX until well combined.
- HEAT a flat griddle or pan. ADD about 1 teaspoon butter.
- SPOON 1/4 cup of batter onto the hot griddle.
- When bubbles appear top of the pancakes, TURN them over and cook for 1-2 minutes until golden brown on both sides.
NOTES
- Double the pancake mix batter to have a supply of the mix for later use.
- Batter: Just remember the 1-1-1-1 rule: 1 c pancake mix,1 egg, 1 c milk ( use ½ buttermilk), 1 T butter.
