A new spin on a classic recipe
We’re a family of snackers. It’s not a party without the original Chex Party Mix. My mother-in-law has been making Chex Party Mix for every holiday party for as long as I have been a part of her family. For this holiday season, I offered to bring the part mix, and tweaked her recipe to make this Curried Party Mix recipe. It was a hit.
Curried Party Mix has a little bit of sweet, a touch of heat and a whole lot of crunch. I love the crunchy asian noodles and the hint of spiciness of the curry powder. The rice Chex makes the mix seem a little bit lighter. The bowl was polished off in no time at all.
What’s In Curried Party Mix
- small can Asian-style crunchy noodles
- rice Chex cereal
- salted roasted cashew pieces
- salted roasted peanuts
- sweetened shredded coconut, toasted
- butter
- soy sauce
- curry powder
- ground ginger
- cayenne (optional)
Oven vs Microwave
I remember the original Chex mix was made in the oven, but now the Original Chex Party Mix recipe uses the microwave. It’s a whole lot quicker using the microwave, but I prefer the oven method.
I think the mix comes out much crunchier and gives the seasoning a chance all meld together. You do have to take the time to stir the mix every 15 minutes to keep it from burning. So worth it.
But the microwave works works, too, especially when you’re in a hurry. It only takes 5 or 6 minutes for the microwave version vs 40 minutes or so when using the oven method.
How to Make Curried Party Mix
Oven
- Preheat oven to 250 degrees.
- In a small saucepan on the stove or in the microwave-safe bowl in the microwave, melt the butter.
- Add curry powder, ginger, and soy sauce to the butter. Mix to combine.
- Line a rimmed baking sheet with parchment paper.
- In a large bowl, combine the noodles, Chex cereal, cashews, peanuts, and coconut.
- Pour half of the butter mixture over the Chex mixture. Toss to coat.
- Pour in the rest of the butter mixture. Toss to coat.
- Spread the mixture onto the sheet pan. Bake for 40 minutes, stirring every 15 minutes until lightly brown and crisp.
- Remove from oven and let cool completely on the sheet pan.
- Mix will keep in an airtight container for one month.
Microwave
- In large microwavable bowl, combine the noodles, Chex cereal, cashews, peanuts, and coconut.
- In small microwavable bowl, heat butter uncovered on High for about 30 seconds or until melted.
- Stir in seasonings.
- Pour over cereal mixture; stir until evenly coated.
- Microwave mixture on high for 5 to 6 minutes.
- Stir mixture every 2 minutes.
- Spread on paper towels to cool.
- Mix will keep in an airtight container for one month.
Curried Party Mix
Ingredients
- 1 small can Asian-style crunchy noodles
- 2 cups Rice Chex cereal
- 1 cup salted roasted cashew pieces
- 1/2 cup salted roasted peanuts
- 1/2 cup sweetened shredded coconut lightly toasted
- 1/4 cup butter
- 1 teaspoon soy sauce
- 1 teaspoon curry powder
- 1/4 teaspoon ground ginger
- 1/4 teaspoon cayenne optional
Instructions
Oven Method
- PREHEAT oven to 250 degrees.
- In a small saucepan on the stove or in a microwave-safe bowl in the microwave, MELT the butter.
- ADD curry powder, ginger, and soy sauce to the butter. MIX to combine.
- LINE a rimmed baking sheet with parchment paper.
- In a large bowl, COMBINE the noodles, Chex cereal, cashews, peanuts, and coconut.
- POUR half of the butter mixture over the Chex mixture. TOSS to coat.
- POUR in the rest of the butter mixture. TOSS to coat.
- SPREAD mixture onto the sheet pan.
- BAKE for 40 minutes, stirring every 15 minutes until lightly brown and crisp.
- REMOVE from oven and let COOL completely on the sheet pan.
- MIX will keep in an airtight container for one month.
Microwave Method
- In large microwavable bowl, COMBINE the noodles, Chex cereal, cashews, peanuts, and coconut.
- In small microwavable bowl, HEAT butter uncovered on high for about 30 seconds or until melted.
- STIR in seasonings.
- POUR half over cereal mixture
- STIR until evenly coated.
- STIR in remaining half of butter mixture.
- STIR until evenly coated.
- MICROWAVE mixture on high for 5 to 6 minutes.
- STIR mixture every 2 minutes.
- SPREAD on paper towels to cool.
- MIX will keep in an airtight container for one month
