Black Bean Salad with Mango Dressing
This recipe for Black Bean Salad with Mango Dressing is based on a recipe I found In Bobby Flay’s Boy Meets Grill. He uses it as a salad served alongside a grilled tuna dish.
I found this treasure of a book at our library book sale. It’s worth much more than the amount of my donation as it’s jam packed with great recipes, not only for the grill but delicious salads, sauces and sides go with them. There are even a few cocktails I’ll be trying this summer.

- black beans
- garlic
- green onions
- mango
- tomato
- jalapeno pepper
- sweet red bell pepper
- hot sauce (I use Frank’s)
- Mango Dressing
What’s In Mango Dressing
- mango
- fresh lime juice
- garlic, minced
- red onion
- cilantro
- cumin
- salt
- freshly ground pepper
- extra virgin olive oil
How to Make Mango Dressing
- Place the mango, lime juice, garlic, red onion, cilantro, cumin and salt in a blender.
- Blend mixture until smooth.
- Continue to blend while slowing adding in the olive oil until mixture is well blended.
How to Make Black Bean Salad
- Combine beans, garlic, green onions, mango, tomato, jalapeno, sweet red pepper and hot sauce in a large bowl.
- Add the Mango Dressing and gently stir to combine.
- Taste and adjust seasonings with additional salt and pepper to taste.
- Serve at room temp as a side or as a salsa with chips.
- It also tastes delicious served warm over rice.

Ingredients
Mango Dressing
- 1 mango peeled, pitted, and rough chopped
- 3 Tablespoons fresh lime juice
- 2 cloves garlic minced
- 2 Tablespoons chopped red onion
- 1/4 cup chopped cilantro
- 1/2 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground pepper
- 3/4 cup extra virgin olive oil
Black Bean Salad
- 2 cans black beans rinsed and drained
- 2 cloves garlic minced
- 2 green onions thinly sliced
- 1 mango peeled, pitted and finely diced
- 1 ripe tomato diced
- 1/2 small jalapeno pepper finely chopped
- 1/4 cup finely chopped sweet red pepper
- 1/2 teaspoon Hot Sauce (I use Frank's) or to taste
- Mango Dressing
Instructions
For the Mango Dressing
- PLACE the mango, lime juice, garlic, red onion, cilantro, cumin and salt in a blender and BLEND until smooth.
- Continue to BLEND while slowing adding in the olive oil until mixture is well blended.
For the Black Bean Salad
- COMBINE beans, garlic, green onions, mango, tomato, jalapeno, sweet red pepper and hot sauce in a large bowl.
- ADD the Mango Dressing and GENTLY stir to combine.
- TASTE and adjust seasonings with additional salt and pepper to taste.
- SERVE at room temp as a side or as a salsa with chips.
